Sauvignon Blanc:

Comes mostly from California, France, New Zealand, and South Africa. Its highly acidic wines are often suggestive of herbs or grass. Light to medium bodied and usually dry, European versions are generally not oaky while California Sauvignon Blanc can take on many of the qualities of Chardonnay. France has two classic wine regions for the Sauvignon Blanc gape: Bordeaux and the Loire Valley The Bordeaux wine is called Bordeaux Blanc and the two best known of the Loire wines are called Sancerre or Pouilly-Fumé. In Bordeaux, Sauvignon Blanc is sometimes blended with Sémillon.


Sonoma:

Like its neighbor Napa, Sonoma is a small area filled with independent wineries and characterized by microclimates that vary according to the topography. The coolest parts of Sonoma are the fog-filled south, where the grape varieties are Pinot Noir and Chardonnay. Northwards up the valley the climate warms and provides a good base for Cabernet Sauvignon and Zinfandel. In general Sonoma wines are less dramatically flavorful than those of Napa. Cabernet Sauvignon is relatively soft, with blackcurrant fruit, minty and eucalyptus perfume, and some soft buttery oak. Zinfandel ranges from soft and gulpable to massive bramble and pepper styles. Chardonnay is rich and juicy, especially from the Russian River, and Sauvignon Blanc can be zingy and grassy. Most Sonoma wines have a freshness and a soft edge which makes them very suitable for drinking on their own, however they partner well with strongly flavored fish and meat dishes. The old-style Zinfandels are delicious with spicy cuisine.

Dao:

Vinho do Dão (or Dão wine) is a Portuguese wine from the Região Demarcada do Dão with the Dão-Lafões sub region of the Centro, Portugal. It is one of the oldest established wine regions in Portugal. Dão wine is produced in a mountainous region with a temperate climate, in the area of the Rio Mondego and Dão rivers in the north central region of Portugal. The region became a Denominação de Origem Controlada (DOC) appellation in 1990. The Dão region is the origin of the Touriga Nacional vine that is the principle component of Port wine.

Mediterranean Salad

Ingredients

1/3 cup balsamic vinegar
3/4 cup olive oil
4 garlic clove, finely chopped
1/3 cup finely chopped fresh basil leaves
4 tomatoes
2 ripe avocados
1/4 lb. mozzarella cheese, thinly sliced
salt, to taste
black pepper, to taste

Preparation

To make the dressing, pour the balsamic vinegar into a bowl and slowly whisk in the olive oil. Once the oil has been incorporated, mix in the finely chopped garlic and basil leaves and season with salt and freshly ground black pepper.

Using a sharp knife, remove the stem ends from the tomatoes. Slice the tomatoes into wedges and place in a large salad bowl.

Dice the avocados into large cubes and add to the tomatoes. Add the mozzarella cheese slices.

Add the dressing and gently mix together. Season to taste with salt and freshly ground pepper and serve at once with crusty bread.
